Creamy Cowboy Soup


Description

A hearty and comforting one-pot soup with a creamy texture, rich flavors, and a savory blend of beef, beans, and spices.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips


Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add diced onion and minced garlic, cooking until the onion becomes translucent.
  3. Stir in beef broth, diced tomatoes, corn, black beans, diced potatoes, smoked paprika, chili powder, ground cumin, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat, cover, and let it simmer for about 20 minutes or until the potatoes are tender.
  5. Stir in the heavy cream and shredded cheese, allowing everything to melt together while heating through. Taste and adjust seasonings as necessary.
  6. Ladle the soup into bowls and top with sliced green onions, additional shredded cheese, and crushed tortilla chips for an excellent crunch.

Notes

For extra depth of flavor, consider browning the beef with a bit of Worcestershire sauce or soy sauce. Use frozen diced potatoes or pre-cooked beef for a quicker option.
