A comforting creamy pasta dish featuring tender chicken, garlic flavor, and a savory cheese sauce enveloping whole wheat pasta.


Ingredients

  • 8 oz whole wheat pasta
  • 1 cup Greek yogurt
  • 1 lb lean chicken breast, diced
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 cups spinach (optional)
  • Salt and pepper to taste
  • Olive oil (for cooking)


Instructions

  1. Cook the whole wheat pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced chicken and cook until golden brown and cooked through.
  3. Toss in the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Reduce the heat to low and stir in the Greek yogurt and Parmesan cheese, mixing until well combined.
  5. Add the cooked pasta to the skillet, tossing everything together until coated and warmed through. If adding spinach, stir it in now and wait until wilted.
  6. Season with salt and pepper to taste, then serve warm and enjoy!

Notes

For a creamier texture, incorporate the yogurt and cheese over low heat. Store leftovers in an airtight container in the refrigerator for up to three days.
