Ingredients
- 8 oz whole wheat pasta
- 1 cup Greek yogurt
- 1 lb lean chicken breast, diced
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 cups spinach (optional)
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions
- Cook the whole wheat pasta according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced chicken and cook until golden brown and cooked through.
- Toss in the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Reduce the heat to low and stir in the Greek yogurt and Parmesan cheese, mixing until well combined.
- Add the cooked pasta to the skillet, tossing everything together until coated and warmed through. If adding spinach, stir it in now and wait until wilted.
- Season with salt and pepper to taste, then serve warm and enjoy!
Notes
For a creamier texture, incorporate the yogurt and cheese over low heat. Store leftovers in an airtight container in the refrigerator for up to three days.
