Creamy Rotel Pasta with Ground Beef


Description

A cozy and flavorful weeknight dinner combining creamy cheese, zesty tomatoes, and hearty ground beef with elbow macaroni.


Ingredients

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 can (10 ounces) diced tomatoes with green chilies (Rotel)
  • 1 block (8 ounces) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish (optional)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 7-8 minutes. Drain and set aside.
  2. Brown the Ground Beef: In the same pot, add 2 tablespoons of olive oil over medium heat. Once hot, add ground beef, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add Seasonings: Sprinkle in garlic powder, onion powder, salt, and pepper to taste. Stir and let cook for an additional minute.
  4. Create the Creamy Sauce: Add the can of diced tomatoes with green chilies, cream cheese, and beef broth. Stir until cream cheese melts and everything combines, adding more broth if needed.
  5. Combine and Heat: Fold in the cooked macaroni and cheddar cheese. Stir until cheese melts and everything is coated. Cook for an additional 2-3 minutes.
  6. Serve and Garnish: Spoon the creamy pasta into bowls and garnish with fresh cilantro or parsley if desired. Serve hot.

Notes

Use a good quality beef broth for enhanced flavor. You can add vegetables or try different cheeses for a creative twist.
