Ingredients

  • 1 lb sausage
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish


Instructions

  1. In a large pot over medium heat, cook the sausage until browned.
  2. Stir in the diced potatoes and chopped onion, cooking for about 3 to 4 minutes until the onion becomes translucent.
  3. Pour in the chicken broth and bring everything to a gentle boil.
  4. Reduce the heat and let it simmer until the potatoes are tender, approximately 15 minutes.
  5. Add the shredded sharp cheddar cheese and sour cream, stirring until both are melted and the soup is creamy.
  6. Season with salt and pepper to your taste.
