Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups heavy cream or coconut milk
  • 4 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
  • Salt and pepper to taste
  • Optional: herbs for seasoning (like thyme or basil)


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until softened and fragrant—about 3-4 minutes.
  2. Pour in the vegetable broth and bring it to a gentle simmer.
  3. Add the mixed vegetables and let them cook until tender—about 10 minutes.
  4. Stir in the heavy cream or coconut milk, seasoning with salt, pepper, and selected herbs to taste.
  5. Allow the soup to continue cooking for an additional 5 minutes, then serve warm.

Notes

For extra thickness, blend part of the soup and then stir it back in. Add a squeeze of lemon juice before serving for brightness.
