Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups heavy cream or coconut milk
- 4 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
- Salt and pepper to taste
- Optional: herbs for seasoning (like thyme or basil)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until softened and fragrant—about 3-4 minutes.
- Pour in the vegetable broth and bring it to a gentle simmer.
- Add the mixed vegetables and let them cook until tender—about 10 minutes.
- Stir in the heavy cream or coconut milk, seasoning with salt, pepper, and selected herbs to taste.
- Allow the soup to continue cooking for an additional 5 minutes, then serve warm.
Notes
For extra thickness, blend part of the soup and then stir it back in. Add a squeeze of lemon juice before serving for brightness.
