Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Combine the shredded chicken, white beans, corn, diced onion, minced garlic, chicken broth, heavy cream, cumin, chili powder, salt, and pepper in a crockpot.
- Stir everything until well mixed.
- Cover your crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, taste your chili and adjust the seasonings as needed.
- Serve hot, garnished with optional toppings such as fresh cilantro, avocado, or cheese.
Notes
For a lighter option, substitute heavy cream with Greek yogurt or coconut milk. This chili pairs well with warm tortilla chips or homemade cornbread.
