Creamy White Chicken Chili


Description

A rich and creamy twist on traditional chili, perfect for chilly evenings and busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Combine the shredded chicken, white beans, corn, diced onion, minced garlic, chicken broth, heavy cream, cumin, chili powder, salt, and pepper in a crockpot.
  2. Stir everything until well mixed.
  3. Cover your crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, taste your chili and adjust the seasonings as needed.
  5. Serve hot, garnished with optional toppings such as fresh cilantro, avocado, or cheese.

Notes

For a lighter option, substitute heavy cream with Greek yogurt or coconut milk. This chili pairs well with warm tortilla chips or homemade cornbread.
