Ingredients
- 1 lb chicken breasts
- 1 can diced tomatoes
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Cooked pasta (optional for serving)
Instructions
- Place the chicken breasts at the bottom of your crock pot.
- Add in the diced tomatoes, chicken broth, minced garlic, basil, oregano, salt, and pepper. Stir gently to combine.
- Cover the pot and cook on low for 6-8 hours, allowing the flavors to meld beautifully.
- About 30 minutes before serving, shred the chicken using two forks and return it to the soup.
- Stir in the heavy cream and Parmesan cheese, mixing until everything is well combined and creamy.
- Serve warm, over cooked pasta if desired, and enjoy!
Notes
Garnish with fresh parsley or additional Parmesan for an attractive presentation. Pair with crusty bread or a side salad.
