Ingredients
- 2 chicken breasts
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Place the chicken breasts directly in the crock pot.
- In a separate bowl, combine the chopped sun-dried tomatoes, heavy cream, chicken broth, garlic powder, Italian seasoning, and a pinch of salt and pepper. Stir until well mixed.
- Pour this creamy mixture over the chicken in the crock pot.
- Cover and let it cook on low for 4-6 hours, or until the chicken is fully cooked and easily shreds apart.
- Serve over pasta, rice, or mashed potatoes, and garnish with fresh basil if desired.
Notes
For a lighter version, substitute half-and-half for the heavy cream. To add richness, consider mixing in parmesan cheese towards the end of cooking.
