Description

A creamy and hearty cheeseburger soup that simmers in your slow cooker, perfect for chilly evenings or busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 2 carrots, diced
  • 1 teaspoon dried basil
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste


Instructions

  1. Brown the Meat: In a skillet over medium heat, cook the ground beef until it’s browned. Add the chopped onion and garlic, and cook until the onion is translucent. Drain the excess grease and transfer the mixture to the crockpot.
  2. Add Ingredients: Pour in the beef broth and add the diced potatoes, carrots, dried basil, and Worcestershire sauce. Give it a good stir.
  3. Slow Cook: Cover the crockpot and set it to cook on low for 6-8 hours or high for about 4 hours.
  4. Finish With Cheese: About 30 minutes before serving, stir in the shredded cheddar cheese and milk. Season with salt and pepper to taste.

Notes

For extra creaminess, consider adding more cheese or a dollop of sour cream before serving. Store leftovers in an airtight container for up to 3 days or freeze for 2-3 months.
