A simple and hassle-free recipe for tender, juicy chicken breasts cooked in a crockpot, perfect for meal prep and weeknight dinners.
Ingredients
- 4 boneless, skinless chicken breasts (6-8 oz each)
- 1/2 cup low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp garlic powder
Instructions
- Pour the chicken broth into the bottom of your slow cooker.
- In a small bowl, mix the kosher salt, onion powder, thyme, paprika, black pepper, and garlic powder.
- Pat the chicken breasts dry with paper towels.
- Drizzle olive oil over the chicken and rub to coat.
- Sprinkle the seasoning blend over the chicken and press gently to adhere.
- Place the chicken in the slow cooker in a single layer.
- Cover and cook on LOW for 2.5 to 3.5 hours or on HIGH for 1.5 to 2.5 hours.
- Check the internal temperature with a meat thermometer; it should reach 165°F (74°C).
- Transfer the chicken to a cutting board and let it rest for 5-10 minutes before slicing or shredding.
- Serve the chicken and spoon the cooking liquid over it for added flavor.
Notes
For meal prep, store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
