Description

A simple and hassle-free recipe for tender, juicy chicken breasts cooked in a crockpot, perfect for meal prep and weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts (6-8 oz each)
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp garlic powder


Instructions

  1. Pour the chicken broth into the bottom of your slow cooker.
  2. In a small bowl, mix the kosher salt, onion powder, thyme, paprika, black pepper, and garlic powder.
  3. Pat the chicken breasts dry with paper towels.
  4. Drizzle olive oil over the chicken and rub to coat.
  5. Sprinkle the seasoning blend over the chicken and press gently to adhere.
  6. Place the chicken in the slow cooker in a single layer.
  7. Cover and cook on LOW for 2.5 to 3.5 hours or on HIGH for 1.5 to 2.5 hours.
  8. Check the internal temperature with a meat thermometer; it should reach 165°F (74°C).
  9. Transfer the chicken to a cutting board and let it rest for 5-10 minutes before slicing or shredding.
  10. Serve the chicken and spoon the cooking liquid over it for added flavor.

Notes

For meal prep, store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
