Crockpot Chicken Thigh Pot Roast


Description

A warm and hearty meal featuring juicy chicken thighs, tender carrots, and buttery potatoes, all slow-cooked in a rich broth with aromatic herbs.


Ingredients

  • 4 Chicken thighs
  • 2 Carrots, chopped
  • 4 Potatoes, diced
  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 4 cups Chicken broth
  • 2 tsp Rosemary
  • 2 tsp Thyme
  • Salt and Pepper to taste


Instructions

  1. Place the chicken thighs at the bottom of the crockpot.
  2. Chop the carrots, potatoes, and onion, adding them to the pot.
  3. Mince the garlic and toss it in.
  4. Pour the chicken broth over the mixture, covering everything.
  5. Season with rosemary, thyme, salt, and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is tender and fully cooked.

Notes

Feel free to swap out chicken thighs for breasts. For extra flavor, sear the chicken before cooking.
