Ingredients
- 4 Chicken thighs
- 2 Carrots, chopped
- 4 Potatoes, diced
- 1 Onion, chopped
- 3 Garlic cloves, minced
- 4 cups Chicken broth
- 2 tsp Rosemary
- 2 tsp Thyme
- Salt and Pepper to taste
Instructions
- Place the chicken thighs at the bottom of the crockpot.
- Chop the carrots, potatoes, and onion, adding them to the pot.
- Mince the garlic and toss it in.
- Pour the chicken broth over the mixture, covering everything.
- Season with rosemary, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is tender and fully cooked.
Notes
Feel free to swap out chicken thighs for breasts. For extra flavor, sear the chicken before cooking.
