Crockpot Honey Garlic Chicken

Ingredients

  • 2 lbs chicken thighs or breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Green onions (for garnish)


Instructions

  1. In a mixing bowl, combine honey, soy sauce, minced garlic, salt, and pepper.
  2. Place the chicken in your crockpot and pour the honey garlic mixture over the top.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is thoroughly cooked.
  4. If you’d like a thicker sauce, stir together the cornstarch and water in a small bowl, then mix it into the sauce in the crockpot. Cook for an additional 30 minutes.
  5. Serve the chicken over a bed of rice or noodles, garnished with freshly chopped green onions for a pop of color.

Notes

For more depth of flavor, marinate the chicken in the sauce for a couple of hours before cooking. Consider using low-sodium soy sauce for a healthier option.
