Description

A comforting and hearty soup that combines the flavors of traditional lasagna into a one-pot meal, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef or vegetable broth
  • 2 cups uncooked pasta (e.g., lasagna noodles broken into pieces)
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Brown the ground beef or sausage in a large skillet with the chopped onion and minced garlic until fully cooked. Drain any excess fat.
  2. Transfer the cooked meat mixture to a crockpot. Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Stir well.
  3. Set the crockpot to low and cook for 6 to 8 hours, or on high for 3 to 4 hours.
  4. About 30 minutes before serving, stir in the uncooked pasta and cook until tender.
  5. Once the pasta is done, stir in the ricotta, mozzarella, and Parmesan cheeses until melted and mixed thoroughly.
  6. Ladle the soup into bowls and garnish with fresh basil if desired.

Notes

For a bit of heat, add crushed red pepper flakes. Mix in an additional cup of ricotta for a creamier texture.
