A comforting and hearty soup that combines the flavors of traditional lasagna into a one-pot meal, perfect for busy weeknights.
Ingredients
- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups beef or vegetable broth
- 2 cups uncooked pasta (e.g., lasagna noodles broken into pieces)
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Brown the ground beef or sausage in a large skillet with the chopped onion and minced garlic until fully cooked. Drain any excess fat.
- Transfer the cooked meat mixture to a crockpot. Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Stir well.
- Set the crockpot to low and cook for 6 to 8 hours, or on high for 3 to 4 hours.
- About 30 minutes before serving, stir in the uncooked pasta and cook until tender.
- Once the pasta is done, stir in the ricotta, mozzarella, and Parmesan cheeses until melted and mixed thoroughly.
- Ladle the soup into bowls and garnish with fresh basil if desired.
Notes
For a bit of heat, add crushed red pepper flakes. Mix in an additional cup of ricotta for a creamier texture.
