Description

A flavorful and easy crockpot recipe combining tender chicken with zesty Mexican flavors, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can black beans, drained
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (your favorite variety)
  • Rice (for serving)


Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the black beans and corn directly on top of the chicken.
  3. Spoon your favorite salsa over the layers in the pot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  5. Using two forks, shred the chicken right in the pot and stir it with the other ingredients.
  6. Serve over rice, in tacos, or atop a fresh salad.

Notes

For enhanced flavor, consider marinating the chicken in salsa for a few hours. Using pre-cooked chicken can save time.
