Ingredients
- 2 boneless, skinless chicken breasts
- 1 can black beans, drained
- 1 cup corn (frozen or canned)
- 1 cup salsa (your favorite variety)
- Rice (for serving)
Instructions
- Place the chicken breasts in the crockpot.
- Add the black beans and corn directly on top of the chicken.
- Spoon your favorite salsa over the layers in the pot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
- Using two forks, shred the chicken right in the pot and stir it with the other ingredients.
- Serve over rice, in tacos, or atop a fresh salad.
Notes
For enhanced flavor, consider marinating the chicken in salsa for a few hours. Using pre-cooked chicken can save time.
