Description

A creamy and comforting potato soup made effortlessly in a slow cooker, perfect for chilly days and busy weeknights.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: bacon bits, green onions, sour cream


Instructions

  1. Add the diced potatoes and chopped onion to your crockpot.
  2. Pour the chicken or vegetable broth over the vegetables.
  3. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  4. For a creamier texture, mash some of the potatoes in the pot with a potato masher.
  5. Stir in heavy cream and shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste.
