Ingredients
- 4 large potatoes, peeled and diced

Instructions
- Add the diced potatoes and chopped onion to your crockpot.
- Pour the chicken or vegetable broth over the vegetables.
- Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- For a creamier texture, mash some of the potatoes in the pot with a potato masher.
- Stir in heavy cream and shredded cheddar cheese until melted and well combined.
