Description

A comforting and hearty taco casserole cooked in a slow cooker, perfect for busy weeknights and gatherings.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes (canned or fresh)
  • 6 tortillas, cut into strips
  • Sour cream for serving
  • Chopped cilantro for garnish


Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain any excess fat.
  2. In a slow cooker, combine the browned beef with black beans, corn, taco seasoning, and diced tomatoes. Mix until combined.
  3. Layer tortilla strips on top, finishing with a generous layer of shredded cheese.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until heated through and cheese is melted.
  5. Serve with dollops of sour cream and a sprinkle of cilantro on top.

Notes

Feel free to substitute the ground beef for ground turkey or plant-based options for a lighter or vegetarian dish.
