Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup diced tomatoes (canned or fresh)
- 6 tortillas, cut into strips
- Sour cream for serving
- Chopped cilantro for garnish
Instructions
- Brown the ground beef in a skillet over medium heat, then drain any excess fat.
- In a slow cooker, combine the browned beef with black beans, corn, taco seasoning, and diced tomatoes. Mix until combined.
- Layer tortilla strips on top, finishing with a generous layer of shredded cheese.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, until heated through and cheese is melted.
- Serve with dollops of sour cream and a sprinkle of cilantro on top.

Feel free to substitute the ground beef for ground turkey or plant-based options for a lighter or vegetarian dish.
