- 1 lb ground beef
- 1 packet taco seasoning
- 8 oz pasta (like rotini or penne)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth or water
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Add the taco seasoning and follow the package instructions, draining any excess fat.
- In your crockpot, combine the browned beef, diced tomatoes, beef broth, black beans, corn, and pasta. Stir to mix everything well.
- Set the crockpot to low for 6-8 hours or high for 3-4 hours until the pasta is tender.
- About 15 minutes before serving, stir in the shredded cheese and let it melt into the mixture.
