Ingredients
- Boneless, skinless chicken breasts
- Cream cheese
- Corn
- Black beans
- Diced tomatoes
- Cumin
- Chili powder
- Garlic powder
- Chicken broth
- Salt and pepper
Instructions
- Place the boneless, skinless chicken breasts at the bottom of the crockpot.
- Add in the corn, black beans, diced tomatoes, and savory seasonings.
- Pour the chicken broth over the mixture and stir to combine evenly.
- Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and shreds easily.
- Shred the chicken in the pot using two forks.
- Add the cream cheese and stir until melted and fully incorporated.
- Season with salt and pepper to taste before serving hot.
Notes
For a thicker consistency, blend some of the beans before serving. Garnish with fresh cilantro or shredded cheese, and pair with crusty bread or cornbread.
