Description

A creamy and comforting white chicken chili made in a crockpot, perfect for busy weeknights.


Ingredients

  • Boneless, skinless chicken breasts
  • Cream cheese
  • Corn
  • Black beans
  • Diced tomatoes
  • Cumin
  • Chili powder
  • Garlic powder
  • Chicken broth
  • Salt and pepper


Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  2. Add in the corn, black beans, diced tomatoes, and savory seasonings.
  3. Pour the chicken broth over the mixture and stir to combine evenly.
  4. Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and shreds easily.
  5. Shred the chicken in the pot using two forks.
  6. Add the cream cheese and stir until melted and fully incorporated.
  7. Season with salt and pepper to taste before serving hot.

Notes

For a thicker consistency, blend some of the beans before serving. Garnish with fresh cilantro or shredded cheese, and pair with crusty bread or cornbread.
