Ingredients
- 1 English cucumber or Kirby pickling cucumbers, thinly sliced
- 1 cup cottage cheese (small or medium curd)
- 2 tablespoons fresh herbs (dill, chives, or parsley), finely chopped
- Honey, optional (for a sweet finish)
- Balsamic glaze, optional (for a richer, tangy-sweet note)
Instructions
- Wash and dry the cucumbers. Slice them into 1/4-inch (6 mm) rounds.
- If cottage cheese is runny, drain it lightly in a fine sieve for a minute or mix in a spoonful of cream cheese to thicken.
- Using a teaspoon or small piping bag, place about a tablespoon of cottage cheese on each cucumber round.
- Sprinkle chopped fresh herbs over each bite.
- Finish with a drizzle of honey or balsamic glaze, and a pinch of cracked black pepper if desired.
- Arrange on a platter and serve immediately.
Notes
For plant-based versions, substitute cottage cheese with thick vegan cottage cheese. Keep cucumbers and cheese separate until just before serving for optimal freshness.
