Description

Ingredients

  • 1 cup rolled oats
  • 2 cups milk (dairy or plant-based)
  • 1/4 cup sugar (or sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/4 tsp ground cinnamon (optional)
  • Pinch of salt
  • Fresh fruit or nuts for topping (optional)


Instructions

  1. In a medium saucepan, bring the milk and sugar to a simmer over medium heat.
  2. Add the rolled oats to the saucepan. Cook while stirring occasionally until the oats are tender and the mixture thickens, about 5–7 minutes.
  3. In a separate bowl, whisk together the egg, vanilla extract, and cinnamon (if using).
  4. Take a small amount of hot oatmeal and slowly drizzle it into the egg mixture while whisking constantly to temper the egg.
  5. Gradually stir the tempered egg mixture back into the saucepan with the oats and cook for another 1–2 minutes until thickened to a custard-like consistency.
  6. Remove from heat and stir in a pinch of salt. Serve topped with fresh fruit or nuts if desired.

Notes

For extra creaminess, ensure the oats are cooked until thick. Experiment with various toppings for added flavor and nutrition.
