Description

A comforting, creamy soup packed with the goodness of chickpeas and rich garlic flavor.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
  2. Add the cumin and paprika, letting them cook for an additional minute.
  3. Toss in the chickpeas along with the vegetable broth, bringing the mixture to a boil.
  4. Once boiling, reduce the heat and allow the soup to simmer for about 10 to 15 minutes.
  5. Use an immersion blender to blend the soup until smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For a spicy kick, add a pinch of cayenne pepper or diced jalapeños. Can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
