Ingredients
- 1 can chickpeas, drained and rinsed
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
- Add the cumin and paprika, letting them cook for an additional minute.
- Toss in the chickpeas along with the vegetable broth, bringing the mixture to a boil.
- Once boiling, reduce the heat and allow the soup to simmer for about 10 to 15 minutes.
- Use an immersion blender to blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a spicy kick, add a pinch of cayenne pepper or diced jalapeños. Can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
