Description

A delightful Easter Cookie Cake that combines the nostalgia of a cookie with the shareable qualities of a cake, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1 cup frosting (your choice of color)
  • Sprinkles or edible decorations


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Add in the vanilla extract and eggs, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spread the cookie dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cookie cake to cool completely in the baking pan.
  9. Once cooled, frost the top with your favorite frosting and decorate with sprinkles.
  10. Cut into squares and serve.

Notes

To store leftovers, keep in an airtight container at room temperature for up to three days or freeze unfrosted for up to three months.
