Description

Ingredients

  • 2 cans black beans (drained and rinsed)
  • 8 to 10 cloves of garlic (minced)
  • 1 onion, chopped
  • 1 bell pepper, chopped (any color will work)
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 lime (juiced)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Begin by heating olive oil in a large pot over medium heat.
  2. Add the chopped onions, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are soft and fragrant.
  3. Stir in the cumin and cook for another minute to allow the spices to bloom.
  4. Add the black beans and vegetable broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer uncovered for about 15 minutes, allowing the flavors to meld together.
  6. Use an immersion blender to blend the soup to your desired consistency, whether smooth or a bit chunky.
  7. Stir in fresh lime juice and season with salt and pepper to taste. Serve it hot, and enjoy!
