Description

Delicious ground beef enchiladas packed with melty cheese and savory enchilada sauce, perfect for a quick weeknight meal.


Ingredients

  • 1 lb ground beef
  • 1 cup enchilada sauce
  • 1 ½ cups shredded cheese (cheddar and Monterey Jack blend)
  • 8 flour tortillas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional)
  • Sliced green onions (optional)


Instructions

  1. Heat a skillet over medium heat and add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
  2. Add your ground beef to the skillet, breaking it apart with a spoon. Cook until browned, ensuring it’s nice and crumbly.
  3. Stir in the cumin, chili powder, paprika, and salt. Allow the mixture to blend and simmer briefly with a splash of the enchilada sauce.
  4. As the mixture simmers, preheat your oven to 375°F (190°C) and warm the flour tortillas lightly.
  5. Spoon a generous amount of the beef filling onto each tortilla, top with shredded cheese, and roll tightly. Place them seam side down in a baking dish.
  6. Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure each one is well coated. Top with shredded cheese.
  7. Place the baking dish in the oven and bake for about 15 minutes, or until the cheese is bubbly and slightly browned. Let rest for a few minutes before slicing.
