Ingredients
- 1 lb ground beef
- 1 cup enchilada sauce
- 1 ½ cups shredded cheese (cheddar and Monterey Jack blend)
- 8 flour tortillas
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Sour cream (optional)
- Sliced green onions (optional)
Instructions
- Heat a skillet over medium heat and add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
- Add your ground beef to the skillet, breaking it apart with a spoon. Cook until browned, ensuring it’s nice and crumbly.
- Stir in the cumin, chili powder, paprika, and salt. Allow the mixture to blend and simmer briefly with a splash of the enchilada sauce.
- As the mixture simmers, preheat your oven to 375°F (190°C) and warm the flour tortillas lightly.
- Spoon a generous amount of the beef filling onto each tortilla, top with shredded cheese, and roll tightly. Place them seam side down in a baking dish.
- Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure each one is well coated. Top with shredded cheese.
- Place the baking dish in the oven and bake for about 15 minutes, or until the cheese is bubbly and slightly browned. Let rest for a few minutes before slicing.
