Description

A fast, protein-packed breakfast featuring creamy cottage cheese and silky mashed avocado on toasted bread, finished with honey and Everything Bagel seasoning.


Ingredients

  • 1 ripe avocado
  • 2 slices of bread (sourdough or whole grain)
  • 1 cup cottage cheese
  • 1 tablespoon honey
  • 1 teaspoon Everything Bagel seasoning
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste


Instructions

  1. Toast two slices of bread until golden and crisp.
  2. Halve and pit the avocado. Mash the flesh with lemon juice, a pinch of salt, and pepper until mostly smooth.
  3. Spread mashed avocado evenly over warm toast.
  4. Spoon cottage cheese onto each avocado-topped slice and gently spread.
  5. Drizzle with honey and sprinkle with Everything Bagel seasoning.
  6. Serve immediately and enjoy.

Notes

For firmer curds, use Greek-style cottage cheese. Substitute honey with maple syrup for a vegan option and swap cottage cheese for plant-based ricotta if needed.
