Description
A fast, protein-packed breakfast featuring creamy cottage cheese and silky mashed avocado on toasted bread, finished with honey and Everything Bagel seasoning.
Ingredients
- 1 ripe avocado
- 2 slices of bread (sourdough or whole grain)
- 1 cup cottage cheese
- 1 tablespoon honey
- 1 teaspoon Everything Bagel seasoning
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Toast two slices of bread until golden and crisp.
- Halve and pit the avocado. Mash the flesh with lemon juice, a pinch of salt, and pepper until mostly smooth.
- Spread mashed avocado evenly over warm toast.
- Spoon cottage cheese onto each avocado-topped slice and gently spread.
- Drizzle with honey and sprinkle with Everything Bagel seasoning.
- Serve immediately and enjoy.
Notes
For firmer curds, use Greek-style cottage cheese. Substitute honey with maple syrup for a vegan option and swap cottage cheese for plant-based ricotta if needed.
