Easy Crockpot White Chicken Chili Soup


Description

A warm and comforting white chicken chili made effortlessly in a crockpot, combining tender chicken, hearty beans, and zesty spices.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, cheese, avocado


Instructions

  1. Start by placing the chicken breasts at the bottom of your crockpot.
  2. Add in the drained white beans, corn, diced green chilies, chopped onion, and minced garlic.
  3. Pour in the chicken broth and sprinkle the cumin, paprika, salt, and pepper over the top.
  4. Stir everything together until well combined.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once done, shred the chicken in the crockpot using two forks and stir everything well.
  7. Serve hot with your choice of toppings.

Notes

For enhanced flavor, consider sautéing onion and garlic before adding them to the crockpot. Freeze leftovers for up to three months.
