A warm and comforting white chicken chili made effortlessly in a crockpot, combining tender chicken, hearty beans, and zesty spices.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: sour cream, cilantro, cheese, avocado
Instructions
- Start by placing the chicken breasts at the bottom of your crockpot.
- Add in the drained white beans, corn, diced green chilies, chopped onion, and minced garlic.
- Pour in the chicken broth and sprinkle the cumin, paprika, salt, and pepper over the top.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once done, shred the chicken in the crockpot using two forks and stir everything well.
- Serve hot with your choice of toppings.
Notes
For enhanced flavor, consider sautéing onion and garlic before adding them to the crockpot. Freeze leftovers for up to three months.
