Description

Hearty homemade breakfast burritos filled with scrambled eggs, breakfast sausage, and cheese, perfect for busy mornings.


Ingredients

  • 1 lb Breakfast sausage, cooked and crumbled
  • 12 large Eggs
  • Salt and pepper to taste
  • 1 tbsp Vegetable oil
  • 12 (10-inch) flour tortillas
  • 1 cup Cheddar cheese
  • 1/2 cup Milk
  • 1 cup Monterey jack cheese


Instructions

  1. Heat the vegetable oil in a skillet over medium heat. Add the crumbled sausage until warmed through.
  2. Whisk together the eggs, milk, salt, and pepper in a large bowl until well combined. Pour this mixture into the skillet, scrambling the eggs until fully cooked.
  3. Lay out your flour tortillas on a clean surface. Spoon a portion of the scrambled egg mixture into the center of each tortilla and sprinkle with cheddar and Monterey jack cheeses.
  4. Roll up each tortilla tightly, folding in the sides to create a secure burrito.
  5. Place the burritos in the freezer for meal prep or heat and enjoy them immediately.

Notes

Store assembled burritos in airtight freezer bags or wrap tightly in aluminum foil. They can be stored in the freezer for up to three months.
