Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and celery. Sauté until the vegetables are tender, around 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute, until fragrant.
  3. Pour in the chicken broth and bring it to a gentle boil.
  4. Add the orzo pasta and cook according to package instructions until it’s al dente.
  5. Once the pasta is cooked, stir in the shredded chicken and lemon juice. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley for a pop of color.

Notes

For added flavor, use homemade chicken broth. Feel free to add spinach or kale for extra nutrition.
