Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and celery. Sauté until the vegetables are tender, around 5-7 minutes.
- Stir in the minced garlic and cook for another minute, until fragrant.
- Pour in the chicken broth and bring it to a gentle boil.
- Add the orzo pasta and cook according to package instructions until it’s al dente.
- Once the pasta is cooked, stir in the shredded chicken and lemon juice. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley for a pop of color.
Notes
For added flavor, use homemade chicken broth. Feel free to add spinach or kale for extra nutrition.
