A comforting lentil potato soup that’s nourishing and simple to make, perfect for chilly days.
Ingredients
- 1 cup lentils, rinsed
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion, garlic, sliced carrots, and chopped celery, and sauté until softened, about 5-7 minutes.
- Stir in the rinsed lentils, diced potatoes, cumin, salt, and pepper until well combined.
- Pour in the vegetable broth and bring to a vigorous boil.
- Reduce the heat to let it simmer for about 30 to 40 minutes, or until the lentils are tender.
- Taste and adjust the seasoning if necessary, then serve warm.
Notes
For a creamier texture, blend a portion of the soup with an immersion blender. Customize with different spices or vegetables for added flavor.
