Easy Lentil Potato Soup


Description

A comforting lentil potato soup that’s nourishing and simple to make, perfect for chilly days.


Ingredients

  • 1 cup lentils, rinsed
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion, garlic, sliced carrots, and chopped celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the rinsed lentils, diced potatoes, cumin, salt, and pepper until well combined.
  4. Pour in the vegetable broth and bring to a vigorous boil.
  5. Reduce the heat to let it simmer for about 30 to 40 minutes, or until the lentils are tender.
  6. Taste and adjust the seasoning if necessary, then serve warm.

Notes

For a creamier texture, blend a portion of the soup with an immersion blender. Customize with different spices or vegetables for added flavor.
