  • 1/4 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup erythritol (or any sugar substitute of your choice)
  • 1 tsp baking powder
  • 3 large eggs
  • 1/2 cup melted butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips (or dried fruit, optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, cocoa powder, and baking powder until blended.
  3. In another bowl, whisk together the eggs, melted butter (or coconut oil), vanilla extract, and erythritol until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until fully incorporated.
  5. If you’re feeling adventurous, fold in some sugar-free chocolate chips or dried fruit.
  6. Pour the batter into a greased baking dish and level the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Notes

For a lighter texture, separate the eggs and beat the egg whites until stiff peaks form, then fold into the batter.
