A comforting and quick meal featuring rich pasta enveloped in a creamy tomato sauce, perfect for busy weeknights.
Ingredients
- 1/2 bunch fresh Basil
- 3 cloves Garlic
- 1 Onion
- 500 g fresh Tomatoes
- 500 ml Chicken or vegetable stock
- 250 g Spaghetti
- 2 tbsp Olive oil
- 150 ml Double cream
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion turns translucent.
- Incorporate the fresh tomatoes and cook until they soften and break down.
- Pour in the chicken or vegetable stock, then bring the mixture to a simmer.
- Stir in the spaghetti and cook according to package directions, stirring occasionally.
- Once the pasta reaches an al dente texture, mix in the double cream and fresh basil.
- Season with salt and pepper to your liking.
- Serve hot, garnishing with additional basil if desired.
Notes
Leftovers can be stored in the fridge for about 3 days or frozen for up to a month. Add a splash of stock or water when reheating to restore creaminess.
