Easy One Pot Creamy Tomato Pasta

Description

A comforting and quick meal featuring rich pasta enveloped in a creamy tomato sauce, perfect for busy weeknights.


Ingredients

  • 1/2 bunch fresh Basil
  • 3 cloves Garlic
  • 1 Onion
  • 500 g fresh Tomatoes
  • 500 ml Chicken or vegetable stock
  • 250 g Spaghetti
  • 2 tbsp Olive oil
  • 150 ml Double cream


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion turns translucent.
  3. Incorporate the fresh tomatoes and cook until they soften and break down.
  4. Pour in the chicken or vegetable stock, then bring the mixture to a simmer.
  5. Stir in the spaghetti and cook according to package directions, stirring occasionally.
  6. Once the pasta reaches an al dente texture, mix in the double cream and fresh basil.
  7. Season with salt and pepper to your liking.
  8. Serve hot, garnishing with additional basil if desired.

Notes

Leftovers can be stored in the fridge for about 3 days or frozen for up to a month. Add a splash of stock or water when reheating to restore creaminess.
