Ingredients
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1 tablespoon white vinegar
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, and salt.
- In another bowl, blend the vegetable oil, buttermilk, eggs, food coloring, and vanilla extract until smooth.
- Gradually blend the wet ingredients into the dry mixture, mixing just until combined.
- In a small bowl, combine the baking soda and vinegar, then fold this into your batter.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Notes
For a healthier version, substitute some vegetable oil with unsweetened applesauce. Store leftovers in the refrigerator for up to a week, or freeze without frosting for up to 3 months.
