Ingredients
- 2 sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups vegetable broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
Instructions
- In a crockpot, add the diced sweet potatoes, drained black beans, diced tomatoes, chopped onion, minced garlic, and red bell pepper.
- Pour in the vegetable broth and sprinkle in the chili powder, cumin, salt, and pepper.
- Give everything a good stir to combine.
- Cover and cook on low for 6-8 hours or on high for 4 hours, until the sweet potatoes are tender.
- Serve hot and enjoy!
Notes
For added flavor, consider adding chopped cilantro or lime juice right before serving. You can also sauté the onions and garlic in oil for enhanced flavor.
