A hassle-free vegetarian meal made in a crockpot, combining beans and vibrant vegetables for a hearty stew.
Ingredients
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes with green chilies
- 1 cup corn (frozen or canned)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 3 cups vegetable broth
Instructions
- In your crockpot, combine all the ingredients: black beans, diced tomatoes, corn, bell pepper, onion, garlic, cumin, chili powder, salt, pepper, and vegetable broth.
- Stir everything well to ensure all ingredients are mixed together.
- Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once done, serve hot and enjoy your hearty vegetarian meal!
Notes
For extra flavor, consider sautéing onions and garlic before adding them. You can also add zucchini or spinach in the last 30 minutes of cooking.
