Ingredients
- 1 can white beans (cannellini or navy beans), drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute, allowing the fragrance to fill your kitchen.
- Stir in the drained white beans, vegetable broth, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to meld the flavors.
- Use an immersion blender to blend the soup to your desired consistency, or keep it chunky for a hearty feel.
- Serve hot, garnished with fresh parsley if desired.
