Ingredients

  • 1 can white beans (cannellini or navy beans), drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional minute, allowing the fragrance to fill your kitchen.
  3. Stir in the drained white beans, vegetable broth, thyme, rosemary, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to meld the flavors.
  5. Use an immersion blender to blend the soup to your desired consistency, or keep it chunky for a hearty feel.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For added creaminess, blend in a splash of coconut milk or cream. This soup freezes well for future meals.
