Ingredients
- 1 can white beans, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups spinach or kale (optional)
Instructions
- In a large pot, sauté the chopped onion and minced garlic over medium heat until translucent and fragrant.
- Add the chopped carrots and celery, cooking for a few more minutes until softened.
- Stir in the diced tomatoes and white beans, followed by the vegetable broth, dried thyme, and smoked paprika.
- Raise the heat to bring the mixture to a boil, then reduce to a simmer for about 20-30 minutes.
- If using spinach or kale, stir it in during the last few minutes of cooking.
- Season with salt and pepper to taste before serving.
