Description

Ingredients

  • 1 can white beans, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until translucent and fragrant.
  2. Add the chopped carrots and celery, cooking for a few more minutes until softened.
  3. Stir in the diced tomatoes and white beans, followed by the vegetable broth, dried thyme, and smoked paprika.
  4. Raise the heat to bring the mixture to a boil, then reduce to a simmer for about 20-30 minutes.
  5. If using spinach or kale, stir it in during the last few minutes of cooking.
  6. Season with salt and pepper to taste before serving.
