Ingredients
- 4 chicken breasts
- 8 ounces mushrooms, finely chopped
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until browned.
- Add spinach and cook until wilted.
- Remove from heat and mix in cream cheese, mozzarella, thyme, salt, and pepper.
- Create pockets in each chicken breast and stuff them with the mushroom mixture.
- Season the stuffed breasts with additional salt and pepper and place in a baking dish.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Let rest for a few minutes before serving.
Notes
Serve with mashed potatoes, salad, or roasted vegetables. Store leftovers in the fridge for up to three days.
