Mushroom-Stuffed Chicken Breast


Description

Juicy chicken breasts filled with a flavorful, creamy mushroom mix, perfect for weeknight dinners or impressing guests.


Ingredients

  • 4 chicken breasts
  • 8 ounces mushrooms, finely chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until browned.
  3. Add spinach and cook until wilted.
  4. Remove from heat and mix in cream cheese, mozzarella, thyme, salt, and pepper.
  5. Create pockets in each chicken breast and stuff them with the mushroom mixture.
  6. Season the stuffed breasts with additional salt and pepper and place in a baking dish.
  7. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Let rest for a few minutes before serving.

Notes

Serve with mashed potatoes, salad, or roasted vegetables. Store leftovers in the fridge for up to three days.
