Description

Delightful oatmeal cups that combine rolled oats, apples, and cinnamon into a fluffy, nutritious breakfast.


Ingredients

  • 2 cups rolled oats
  • 2 apples, diced
  • 1 teaspoon ground cinnamon
  • 2 cups milk (or non-dairy milk)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the rolled oats, diced apples, ground cinnamon, and baking powder.
  3. In another bowl, whisk together milk, eggs, honey or maple syrup, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients, stirring until fully incorporated.
  5. Fill each muffin cup about three-quarters full with the mixture.
  6. Bake for 20-25 minutes, or until the tops are golden and a toothpick comes out clean.
  7. Cool slightly before removing from the tin and serve warm.

Notes

These oatmeal cups can be stored in an airtight container in the fridge for up to five days or frozen for three months.
