Ingredients
- 4 large eggs, separated
- 1 cup full-fat cottage cheese (blended smooth)
- 1/4 tsp cream of tartar
- 1/4 tsp salt
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment and lightly spray it.
- Separate egg whites and yolks carefully. Ensure no yolk enters the whites.
- In a large bowl, whip egg whites with cream of tartar and salt until stiff peaks form (about 3–4 minutes).
- In a separate bowl, blend cottage cheese until smooth, then mix in egg yolks.
- Gently fold yolk-cheese mixture into whipped egg whites using a spatula until just combined (avoid overmixing).
- Scoop 1/4 cup mounds onto the prepared baking sheet. Shape into domes.
- Bake for 25–30 minutes until golden. Do not open oven early.
- Cool completely before removing from parchment to allow firming.
Notes
Use full-fat cottage cheese for best texture and flavor. To make flatbreads, spread thinner and bake at 325°F for 15–18 mins. Add flavorings like garlic powder, herbs, or vanilla for variation.
