Description
A comforting take on the classic grilled cheese with rich caramelized onions and gooey melted cheese, all between crispy bread.
Ingredients
- 4 slices of bread (sourdough or hearty white)
- 4 slices of cheese (Gruyère or Swiss)
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional: thyme or other herbs for added flavor
Instructions
- Heat the butter and olive oil in a skillet over medium heat.
- Add the sliced onions along with a pinch of salt. Cook slowly, stirring occasionally, until caramelized, about 20-25 minutes.
- Remove the onions from the heat once they are deep golden brown.
- Butter one side of each slice of bread.
- Assemble the sandwich: Place a slice of cheese on the unbuttered side of one bread slice, add a layer of caramelized onions, place another slice of cheese on top, and finally, put another slice of bread buttered side up.
- Cook the sandwich in a skillet over medium heat until the first side is golden brown. Flip and repeat on the other side until the cheese is melted and the bread is crispy.

Notes
