French Onion Grilled Cheese Sandwich

Description

A comforting take on the classic grilled cheese with rich caramelized onions and gooey melted cheese, all between crispy bread.


Ingredients

  • 4 slices of bread (sourdough or hearty white)
  • 4 slices of cheese (Gruyère or Swiss)
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: thyme or other herbs for added flavor


Instructions

  1. Heat the butter and olive oil in a skillet over medium heat.
  2. Add the sliced onions along with a pinch of salt. Cook slowly, stirring occasionally, until caramelized, about 20-25 minutes.
  3. Remove the onions from the heat once they are deep golden brown.
  4. Butter one side of each slice of bread.
  5. Assemble the sandwich: Place a slice of cheese on the unbuttered side of one bread slice, add a layer of caramelized onions, place another slice of cheese on top, and finally, put another slice of bread buttered side up.
  6. Cook the sandwich in a skillet over medium heat until the first side is golden brown. Flip and repeat on the other side until the cheese is melted and the bread is crispy.

Notes
