Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the diced onions in a skillet over medium heat until soft, about 5 minutes.
  3. In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until thoroughly combined.
  4. Shape the mixture into a loaf form in the greased baking dish.
  5. Sprinkle the remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning for an extra flavor boost.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let it rest for about 10 minutes before slicing.
