A heartfelt favorite, this dish blends garlic and parmesan flavors with tender chicken and creamy baby potatoes, perfect for busy weeknights or special family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Wash the baby potatoes and halve them.
  2. Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
  3. Place halved potatoes at the bottom of the crockpot, then lay the seasoned chicken on top.
  4. Pour chicken broth over chicken and potatoes.
  5. Sprinkle minced garlic over the chicken and add grated parmesan on top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  7. Ensure chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  8. Remove chicken and potatoes from crockpot and spoon remaining sauce over the top.
  9. Garnish with fresh parsley, if desired, before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat using a microwave or stovetop, adding chicken broth as needed.
