Ingredients
- 2 cups all-purpose flour

- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1/2 cup granulated sugar (for rolling)
- 1 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, cream the butter with granulated and brown sugar until light and fluffy.
- Beat in the egg until well incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Shape dough into 1-inch balls and roll in the cinnamon sugar mixture.
- Place on a baking sheet lined with parchment paper, spacing them appropriately.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
