Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream the butter with granulated and brown sugar until light and fluffy.
  4. Beat in the egg until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Shape dough into 1-inch balls and roll in the cinnamon sugar mixture.
  7. Place on a baking sheet lined with parchment paper, spacing them appropriately.
  8. Bake for 10-12 minutes until edges are set but centers are soft.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
