Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Pat the chicken thighs dry with paper towels, then toss them in the seasoning mixture until well coated.
- Arrange the thighs skin-side up on a baking sheet lined with parchment paper, leaving space between pieces for air circulation.
- Roast in the preheated oven for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
- Let the thighs rest for 3–5 minutes before slicing to keep juices locked in.
- Portion the chicken into meal prep containers and refrigerate for the week.
- Serve with your chosen sides when ready.
Notes
For higher smoke point, use avocado oil instead of olive oil. Boneless thighs will cook faster (reduce time by 5–7 minutes). Serve with avocado slices for a creamy element.
