Description

Delicious and easy-to-make gluten-free no bake oatmeal bars, perfect for a quick snack or breakfast on the go.


Ingredients

  • 2 cups gluten-free rolled oats
  • 1/2 cup nut butter (like almond or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruit
  • 1/4 cup chia seeds (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt


Instructions

  1. Combine the gluten-free rolled oats, nut butter, honey or maple syrup, chocolate chips or dried fruit, chia seeds (if using), vanilla extract, and salt in a large bowl.
  2. Stir everything together until well combined; the mixture should be sticky but cohesive.
  3. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Press the mixture evenly into the prepared dish, ensuring it’s compact.
  5. Chill in the fridge for at least 1 hour to allow the bars to set.
  6. Once set, lift from the dish, cut into bars, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to three months. For a fun twist, drizzle melted dark chocolate on top before refrigerating.
