Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 2 cups frozen mixed vegetables
- 1 can (10.5 ounces) cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 pound frozen tater tots
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and ground beef, cooking until the beef is browned. Drain any excess fat.
- Stir in the mixed vegetables and cream of mushroom soup, mixing well. Season with salt and pepper to taste.
- Spread the beef mixture evenly in a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese over the beef mixture evenly.
- Arrange the tater tots on top in a single layer.
- Bake in the preheated oven for about 30-35 minutes or until the tater tots are golden brown and crispy.
- Let cool for a few minutes before serving. Enjoy your comforting casserole!
