Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh basil
  • 2 large eggs
  • 1/2 cup prepared tomato sauce
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • 1/2 cup olive oil
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh mozzarella
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup grated provolone cheese


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper, ensuring they’re well-coated.
  3. Dredge each chicken breast in flour, then dip in the beaten eggs, and coat with panko breadcrumbs.
  4. Heat olive oil in a skillet over medium-high heat, and fry the breaded chicken until golden brown on both sides—about 3-4 minutes each side.
  5. Spread a layer of tomato sauce in a baking dish, place the fried chicken on top, and cover with more sauce.
