Ingredients

  • 1 ½ lbs flank steak or skirt steak
  • 1 cup fresh coriander
  • 3 cloves garlic
  • 1 jalapeño pepper
  • 1 lime (juice of 1 lime)
  • ½ red onion
  • 3 ripe tomatoes
  • ½ cup white onion
  • ¼ cup fresh lime juice
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt to taste
  • ¼ cup olive oil
  • 1 tsp ground cumin
  • 12 small corn tortillas
  • Cotija cheese for topping


Instructions

  1. Start by marinating the flank steak. In a bowl, mix together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Coat the steak with this mixture and let it marinate for at least 30 minutes.
  2. While the steak is marinating, heat a skillet on high heat. Once it’s hot, add the marinated steak and sear for about 5-7 minutes on each side, or until it reaches your desired doneness.
  3. After cooking, remove the steak from the skillet and let it rest for a few minutes. This allows the juices to redistribute, ensuring each bite is tender and juicy. When ready, slice the steak thinly against the grain.
  4. In the same skillet, warm the corn tortillas for a few seconds on each side until they’re soft.
  5. Now it’s time to assemble! Place slices of carne asada on each tortilla, and top with fresh cilantro, diced red onions, and chopped jalapeños for that extra zing.
