Delightful mini cheesecakes embodying the spirit of the Grinch, perfect for holiday celebrations.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 large eggs
  • Green food coloring
  • 1 package graham cracker crumbs
  • 1/2 cup melted butter
  • Toothpicks or small candy eyes for decoration


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, mixing until thoroughly blended. Press this mixture firmly into the bottom of mini cheesecake cups to form a base.
  3. In a large bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy.
  4. Add in the sour cream and eggs, mixing just until fully incorporated.
  5. Stir in green food coloring until you reach your desired shade.
  6. Carefully pour the cheesecake mix over the crusts in the mini cups, filling them about three-quarters full.
  7. Bake in the preheated oven for 20-25 minutes or until set.
  8. Allow the mini cheesecakes to cool completely, then refrigerate for at least four hours to firm up.
  9. Decorate each cheesecake with candy eyes attached to toothpicks before serving.

Notes

For a lighter option, consider using low-fat cream cheese. Experiment with flavored extracts for a fun twist.
