Description

Delicious, cheesy enchiladas packed with savory ground beef and topped with rich enchilada sauce, perfect for weeknight dinners or family gatherings.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef along with the diced onions until the onions are translucent, about 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder to the skillet. Sauté for another minute until fragrant.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce evenly over the tortillas and sprinkle with cheese.
  6. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden.

Notes

For extra crunch, lightly fry the tortillas in oil before filling them. You can substitute ground turkey or chicken for the beef.
